Vanilla Chia Pudding

During my years as an elementary school teacher I would wake up at 5:00am every morning and yet was still somehow always in a rush. Breakfast became an afterthought consisting of a boring banana or an expensive Starbucks run (those shaken espressos and egg white sandwiches add up).

When I discovered the world of chia pudding and overnight oats, my mornings became exponentially smoother. Vanilla chia pudding topped with fresh fruit became my most favorite morning boost, afternoon snack, AND post-dinner dessert.

Needless to say, when Kim K’s vanilla chia pudding went viral, I wasn’t the least bit surprised. Who doesn’t love a healthy 5-minute breakfast that you can take on-the-go?

The recipe below is rather basic with only 3 ingredients. Feel free to get creative and add your other favorite flavors (a tablespoon of cocoa powder is a delicious add-on for fellow chocolate-lovers).

Vanilla Chia Pudding

Ingredients
  

  • 1/2 cup vanilla almond milk
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract

Instructions
 

  • Add the almond milk, chia seeds, and vanilla extract to a container.
  • Mix.
  • Refrigerate overnight.
  • Enjoy!
